Health Camp Restaurant is a cherished and historic establishment that has been serving the Waco community since its founding in 1949. It all began in 1948 when Jack Schaevitz, a young entrepreneur, built a mobile canteen to provide ice cream and burgers to military personnel at the Connally Air Force Base in Waco, Texas. The canteen quickly gained popularity, prompting Jack to open the Health Camp restaurant on the iconic Waco Traffic Circle in 1949.
Jack Schaevitz, a pioneer in the early fast food industry, established Health Camp as a beloved local institution known for its commitment to offering the finest frozen custard, ice cream, and burgers. The original restaurant on the Waco Traffic Circle featured a small kitchen with a convenient walk-up window, attracting both Wacoans and travelers between Dallas and Austin.
Despite the changes brought by the construction of IH-35, Health Camp continued to flourish with the loyal patronage of Baylor University students and its strong ties to the local community. Jack Schaevitz's deep-rooted dedication to local traditions was evident through his participation in the Baylor Homecoming Parade and the display of his photographs capturing the event's spirit within the restaurant.
In 1989, Jack Schaevitz retired, passing the torch to restaurateur David Tinsley and Sammy Citrano, who took over the ownership of Health Camp. Today, the restaurant proudly maintains its original charm, serving signature burgers, delectable custard, and homemade onion rings on its iconic stainless steel countertops. With its nostalgic walk-up window and walls adorned with photographs and newspapers showcasing local history, Health Camp offers visitors an opportunity to relive cherished memories, immerse themselves in the local community, and be a part of Waco's remarkable history.
